Preparation time:
10 min. + 8 hrs to prove + 12 min cooking

Suggested wine:
60g Sabo soy flour
180g semi-whole-wheat flour
10g black sesame seeds
150g water
5g fresh yeast
1 tsp spirulina
1 tsp salt
1 pinch of salt
extra virgin olive oil
Cooking instructions:
First mix together the dry ingredients, apart from the salt. Slowly add the water and knead with your hands or using a kneading machine, then add the salt.

Once the dough has been kneaded well (to resemble bread dough, although slightly stickier), shape it into a ball, place in a container covered with clingfilm and leave to prove for 8 hours.
After this time, take out the dough and divide it into 8/10 portions and shape into small balls. Place them on a baking tray lined with baking paper and bake in the oven for 6 minutes at 220C, with an ovenproof bowl of water placed inside the oven. After 6 minutes, open the oven, take out the bowl of water and lower the oven to 180C. Leave to cook for another 4 min.

Once cooked, leave to cool before serving. Excellent as a side bread or with a filling, as you please.
